Sweet potato soup - it's vegan, cheap and easy!
I am not a huge fan of soup but just had to share this recipe after having it in my local cafe as it was SO tasty. It’s perfect for Veganuary and is really warming. Hope you like it as much as I do.
INGREDIENTS FOR TWO
700g sweet potatoes (about 5-6 small one)
1 can of 400 ml Coconut milk or cream (if you find it to coconutty do half a can and add vegetable stock)
I red onion
2 cloves of garlic
Juice of 2 limes - grate the skin for extra Vitamin C zest and flavour to add when serving
Salt & pepper to taste
Coriander
And if you have a horrid cold add lots of ginger and chilli!
HOW TO
Peal and boil the cubed sweet potatoes, they should only need 15-20 minutes
Meanwhile, fry the onion and garlic till soft
Once cool, just joosh the whole lot up in a blender adding everything else.
You can then freeze it, or pop it in the fridge to heat up later.
Once served, pop on the zest of lime, chilli flakes, coriander or anything else you have to hand.
It really is a meal in a bowl, especially served with a nice green side salad and a chunky piece of bread. And is a great emergency meal if you have unexpected guests. Perfect for winter colds or just winter! I’m popping a bowl in to my 86 year old neighbour today as it is freeeeeeezing right now!
